Why Mushrooms are the Ultimate Winter DIY
There are lots of indoor growing projects you could do in our cold winter months while we gardeners hibernate. You could do microgreens, grow herbs, start seeds, and plan your 2026 outdoor adventure. Also, if you have a dark corner on your kitchen counter and a spare spray bottle, you can be a mushroom farmer. We recently tried the Shiitake Grow Kit from Happy Caps, and we couldn’t believe how easy it was to grow. It’s a fantastic project to do with kids because the growth happens so quickly—sometimes you can actually see the difference between morning and night!
How to Grow Your Shiitake
Growing these delicious caps is easy:

Unbox & Slice: Open the box and cut an “X” into the plastic liner to let the mushrooms breathe.

The Big Soak: Submerge the mushroom block in cold water for about 12–24 hours to “wake up” the mycelium.

Mist & Wait: Place it in a spot with indirect light and mist it a few times a day. In about 7–10 days, you’ll have a beautiful harvest of woody, savory shiitakes!
Beyond the Shiitake: Lion’s Mane & Oyster
